Favorite Fall Activites

Our classes take a fall trip to a park that has a variety of trees.  We collect leaves, seeds, and nuts.

A fall activity that we really enjoy is making pumpkin bread.  This activity coincides with the pumpkin and orange part of our fall unit.  The children help add ingredients and mix.  We bake this recipe in soup cans, so that each child takes home a  loaf to share. 

Pumpkin Bread

2/3 cup shortening
2 2/3 cups sugar
4 eggs
1 can (16 oz.) pumpkin
2/3 cup water
3 1/3 cups all purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground cloves
2/3 cup raisins
Heat oven to 350.  Spray empty, regular-sized soup cans with Pam.  Mix shortening and sugar in large bowl.  Add eggs, pumpkin and water.  Blend in flour, baking soda, salt, baking powder, cinnamon, and cloves.   Stir in raisins.  Fill cans 1/2 full, about 3/4 cup per can.  Place cans on baking sheet and bake about 37 minutes.  This recipe makes bread for 9-10 students.  It is not hard to double.
